Ingredients:

1 cup all-purpose flour

3/4 cup sugar

1/2 cup cocoa powder

1 teaspoon vanilla

1 egg

1/3 cup oil

1/2 cup milk (fresh or tetra pack)

1 teaspoon coffee powder

1/2 cup boiling water

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

 

Method:

First of all, preheat the oven just before you start with your ingredients.

Line the cupcake tray with the cupcake liners.

Then dissolve the coffee powder in the boiling water and keep aside.

Mix all the dry ingredients (flour, sugar, cocoa powder, baking powder and baking soda) in a bowl with a whisk or a hand mixer or an electric mixer.

Add all the wet ingredients (not the coffee mixture) into dry ingredients and mix again. Lastly add the dissolved coffee n mix quickly. Now with the help of ice-cream scooper or tablespoon equally pour the batter in the cupcake liners. (They should be 3/4 filled).

And bake at 180 degree Celsius for 10-12 minutes or by the help of skewer insert in the middle and see if it comes out clean means your cupcake is ready!

 

Buttercream icing:

1/2 butter

1 teaspoon vanilla essence

2 tablespoon cocoa powder

2 cups icing sugar

 2 tablespoon fresh whipping cream (optional)

Beat the butter until creamy; add vanilla essence, icing sugar and coco powder. Mix well. In the last add cream but don’t over beat or else cream will split.

Finally, fill the icing in a plastic bag and frost the cupcakes in various designs using different nozzles. Also you can add some colorful sprinkles or chocolate chips or some chopped nuts. Then serve the cupcakes in stylish serving plate and enjoy with your family, friends or guest!
